Cedella Marley, daughter of reggae legend Bob Marley, combines the healing properties of cannabis with her wellness regimen in Cooking with Herb.

12 fluid oz (1 serving = 1/2 teaspoon = 5 mg THC)

  1. Grind the herb using a hand grinder (you don’t want it to be powder fine—think dried oregano).
  2. Combine the butter and 2 cups water in a medium saucepan. Bring to a low simmer over medium heat. Once the butter begins to melt, add the ground cannabis.
  3. Reduce the heat to low and cook the butter very gently, stirring occasionally and maintaining a temperature of between 200° and 250°F, until the top layer in the saucepan changes from watery to glossy and thick, 2 to 3 hours—you may need to add water if the temperature gets close to the 250°F mark (so the butter doesn’t scorch).
  4. Set a sieve over a medium bowl (preferably glass) and line the sieve with cheesecloth. Pour the infusion into the sieve and let it sit until all of the butter has been filtered, about 5 minutes. Wrap the edges of the cheesecloth over the herb and use a rubber spatula to press on the solids to extract all of the butter (discard the solids). Cover the bowl tightly and refrigerate the strained butter for at least 3 hours or overnight.
  5. The next day, lift out the solid block of butter and discard any liquid remaining in the bowl. Use a paper towel to pat the surface of the butter on all sides to absorb any droplets of moisture. Wrap the butter in two layers of plastic wrap and store it in an airtight container in the refrigerator for up to 2 months or in the freezer for up to 6 months.

  2. Add the melt butter or oil to a slow cooker. If using butter, add 2 cups of hot water (some people choose not to add the water if using the slow cooker method since the chance of scalding is very small however, as a precaution, use water the first time and as you get to be a butter-making expert, adjust your method to suit your needs). Turn the heat to the low setting and add the ground herb. Cover the cooker. The infusion is finished when the top layer changes from watery to glossy and thick, 8 to 24 hours (the length of cooking time depends partially on the herb that you’re using know that cooking for a longer time won’t hurt the butter, just in case you need to leave the slow cooker on overnight or while you’re at work).
  3. Set a sieve over a medium bowl and line the sieve with cheesecloth. Pour the infusion into the sieve and let it sit until all of the butter or oil is filtered, about 5 minutes. Wrap the ends of the cheesecloth over the herb and use a rubber spatula to press on the solids to extract all of the liquid (discard the solids). CannaOil can now be transferred to a jar and stored at room temperature for up to 3 months. For CannaButter, cover the bowl tightly, and refrigerate the strained butter for at least 3 hours or overnight.
  4. The next day, lift out the solid block of butter and discard any liquid remaining in the bowl. Pat the solid butter block with a paper towel, then wrap the butter in two layers of plastic wrap and store it in an airtight container in the refrigerator for up to 2 months or in the freezer for up to 6 months.

Chocolate Swiss Roll Cake

To make the chocolate cake, preheat the oven to 425ºF. Place a piece of parchment paper or a silicone mat on a 17x12 sheet pan, and rub butter on it to grease.

In a large bowl, whisk to combine the cocoa powder, flour, and salt.

Bring an inch of water to a simmer in a medium saucepan. Combine the eggs and sugar in a heatproof glass bowl, then place over the simmering water (make sure the water doesn&rsquot touch the bowl). Using a hand mixer, beat the eggs and sugar together over medium speed for about two minutes, until the eggs are thick, pale yellow, and warm to the touch (if you have a thermometer, you want the eggs to be about 120ºF. If you don&rsquot have a thermometer, just touch the mixture with your finger every once in a while until it feels like hot tap water).

Remove the egg bowl from the heat and continue beating at medium high speed for another 3 minutes, until it&rsquos thick and airy, and has reached the ribbon stage. That means when you drag and drizzle a spoonful of the liquid, it shouldn&rsquot settle back into the liquid for a good 5&ndash10 seconds. Mix in the melted butter.

Add the dry ingredients to the mixture, and gently fold it into the eggs with a spatula, working quickly. Spread the batter onto the buttered parchment or silicone mat, leaving an inch from the edges. Bake the cake for 5&ndash6 minutes, until springy to the touch.

Place a piece of parchment paper on a flat surface and sprinkle lightly with cocoa powder. Flip the cake onto the parchment, then remove the parchment or silicone mat that the cake baked on. Gently roll the cake up into a log while it&rsquos still warm. This is like muscle memory for the cake, and it will roll easier again later.

To make the filling, combine the heavy cream, sugar, and vanilla extract in a large bowl, and whip with a hand mixer to stiff peaks, about 5 minutes on medium speed.

Unroll the cooled cake, then spread the cream all over, leave a 1-inch border around all edges. Roll the cake up gently (leaving the parchment paper behind), then place on a wire rack.

To make the chocolate ganache, microwave the cream and chocolate in a heatproof bowl in 30-second intervals, stirring after each time, until combined. Add the tablespoon of milk, which will give a more pourable consistency. Pour the chocolate ganache evenly over the cake, then refrigerate for 20 minutes before serving, so the ganache can firm up.

Can I double this recipe and does it change the cooking time?

Yes, this recipe can be doubled provided you have a large enough slow cooker. The cooking time will not change.

The recipe says to use uncooked noodles, however, it also says to rinse the pasta?

Yes, rinse the uncooked pasta simply to remove any dust and foreign particles from the manufacturing plant.

I don’t eat yellow cheese, what is a good white substitute?

Monterey Jack works well, as does White American and White Cheddar. A marble cheese should work as well. Sharp cheddars will give this dish the best flavor, try Vermont white sharp cheddar!

Can I make this ahead and reheat it?

We don’t recommend reheating macaroni and cheese as it never tastes quite the same and there’s a possibility that the macaroni will become mushy. However, if this is a deal breaker, you can reheat it – simply add some milk to loosen the thickened sauce while reheating. We recommend making it and having it ready right before you leave. Turn off the slow cooker but leave the lid on. When you arrive stir it and loosen with milk if needed.

How many servings does this make?

This serves 6-8 people. A serving size is 2 ounces of dry pasta which expands to approximately 1.5 cups with sauce when cooked.

Why was my mac and cheese gritty?

Prepackaged shredded cheese contains an anti-caking agent that can cause your final product to taste gritty. Purchase your cheese from the deli and shred it yourself. We’ve also discovered that some less expensive cheeses are gritty even when you shred them yourself, but after the mac and cheese sits for a while the grittiness goes away.

Why was my mac and cheese mushy?

If it cooks too fast or too long it will get mushy. The biggest culprit is an older slow cooker that may cook hotter (even on low) than a newer crock pot. Leave the lid on for one hour on low. DON’T increase the temp to High! Stir after one hour then check after 15 more minutes. Check and stir every 15 minutes after that if needed. Mine was done is 1 hour and 45 minutes.

Mushy mac and cheese can also be the result of using gluten free macaroni noodles as they do not hold up as well. One of our readers made this successfully with gluten free pasta. she said hers was done in 90 minutes but began to get mushy at 2 hours, so it’s important to keep an eye on it!

Can I mix all of the ingredients, refrigerate overnight, and put in the crockpot a few hours prior to serving?

Yes, with the exception of the pasta. Wait until you take it out of the fridge and are turning the slow cooker on before you add the macaroni.

I’m confused by the cooking time, is it 2 hours or 3?

Actually, it’s up to 3 hours. You should cook the dish on low for 1 hour, then stir it and check for doneness. After that, check it periodically (every thirty minutes or so) until it is done. The actual cooking time is completely dependent on the slow cooker you have (similar to ovens, they all cook differently), hence the “up to 3 hours” instruction.

Can I use regular milk instead of evaporated milk?

Don’t use regular milk. However, you can create your own evaporated milk. To make 1 cup of evaporated milk, simmer 2 1/4 cups of regular milk down until it becomes 1 cup.

Is evaporated milk the same as condensed milk?

Condensed milk is sweetened and the two cannot be used interchangeably.
